Aging sherry under\u00a0<strong>\u201cvelo de flor\u201d<\/strong>\u00a0has been a traditional aging process that still plays an important role in the region. Although \u201csherry flor\u201d has been time-honored by bodegas and winemakers for generations it was not until the\u00a0<strong>second half of the 20<\/strong><sup><strong>th<\/strong><\/sup><strong>\u00a0century<\/strong>\u00a0that this microorganism started to be classified and recognized as it is in reality: a group of different yeast strains that develops on the surface of the wine and transforms it throughout its short and fast life cycle. We have been meticulously working with it, striving to know more about these yeasts, and finally mastering it to create one of the\u00a0<strong>most interesting styles of wine ever made<\/strong>:\u00a0<strong>manzanilla de Sanl\u00facar\u00a0<\/strong>and the<strong>\u00a0finos de Jerez\u00a0<\/strong>and<strong>\u00a0El Puerto<\/strong>. The sherry region is not the only region in the world that has traditionally worked with veils of \u201cflor\u201d. France\u2019s Jura region, where Vin Jaune (\u2018Vin de Voile\u2019) also develops this way, is another area where a similar phenomenon occurs, but not nearly as prominently as in Jerez. There are other places with a tradition with flor-aged wines, but they are less well known. Globally, there now seems to be much wider interest in making wines in such a way.<\/p>\n<p>Without \u201cflor\u201d it would be impossible to craft and age such unique styles. We can make an incredible number of wines with just\u00a0<strong>3 white varieties<\/strong>, one of these is the most used producing the entire dry range. If we add to the immense versatility of the palomino a sophisticated aging process, results go beyond our imagination. These wines, because of the yeast, will end in very\u00a0<strong>light, sharp, bone-dry wines<\/strong>. However, if these microorganisms are not present as \u201cveil of flor\u201d the wines will result in rounder, more structured types of sherry. To add more complexity and versatility, there are wines that are aged by mixing both aging processes. The influence of the \u201cflor\u201d first and then the exposure to the oxidative aging process will create\u00a0<strong>exalted masterpieces<\/strong>\u00a0that gather the best from both universes.<\/p>\n<p>Let\u2019s not forget that such incredible level of complexity and diversity is also due in part to the genuine and traditional Solera and Criaderas system. This is the dynamic blending system that allows bodegas to maintain the\u00a0<strong>\u201cflor\u201d colony<\/strong>\u00a0surviving for decades or even centuries, developing unique personalities and profiles among wines of the same style.<\/p>\n<h3 style=\"font-size: 30px;\">WHAT IS THE SHERRY \u201cFLOR\u201d OR \u201cVEIL OF FLOR\u201d?<\/h3>\n\t<div class=\"img has-hover x md-x lg-x y md-y lg-y\" id=\"image_798085082\">\n\t\t\t\t\t\t\t\t<div class=\"img-inner dark\" >\n\t\t\t<img loading=\"lazy\" decoding=\"async\" width=\"810\" height=\"810\" src=\"https:\/\/lustau.es\/wp-content\/uploads\/2023\/08\/Flor-development-GIF-3.gif\" class=\"attachment-large size-large\" alt=\"\" \/>\t\t\t\t\t\t\n\t\t\t\t\t<\/div>\n\t\t\t\t\t\t\t\t\n<style>\n#image_798085082 {\n  width: 100%;\n}\n<\/style>\n\t<\/div>\n\t\n<p>It is generally said that \u201cflor\u201d is a veil of yeast, yet\u00a0<strong>how does yeast appear on the surface of the wine, and why?<\/strong>\u00a0Throughout the fermentation, the grape must lose, little by little, its sugar content and increase its alcoholic strength until the now wine becomes intoxicated by the same yeasts that metabolized the sugar into alcohol. There is too much alcohol and the yeasts, gradually will die. This aspect brings up another angle:\u00a0<strong>If the yeast dies due to the alcohol, how does the \u201cflor yeast\u201d appear?<\/strong><\/p>\n<h3 style=\"font-size: 30px;\">WHEN DOES THE \u201cFLOR\u201d APPEAR DURING THE WINE MAKING PROCESS?<\/h3>\n<p>We start seeing a major change in the base wine when it reaches a level of 11-12% abv. It is in this exact moment when the\u00a0<strong>fermenting yeast changes its metabolism<\/strong>\u00a0and starts taking alcohol, instead of sugar, and turning into a compound known as\u00a0<strong>acetaldehyde<\/strong>. This is how our \u201cflor\u201d yeast survives, adapts to a hostile environment, becomes stronger and rises to the surface of the wine, looking to capture more oxygen, and eventually creating the famous\u00a0<strong>\u201cvelo de flor\u201d<\/strong>. From this moment, and if the winemakers are willing to follow the biological aging process, the palomino base wine will be lastly\u00a0<strong>fortified up to 15% abv<\/strong>\u00a0to create an even more aseptic environment for the \u201cflor\u201d. DIFFERENT EFFECTS OF \u201cFLOR\u201d<\/h3>\n<p>Once the wine aging process in the Solera and Criaderas system has started, our \u201cflor\u201d will develop a thick film of yeasts that will\u00a0<strong>transform the base wine into manzanillas<\/strong>\u00a0(if the wine is aged in Sanl\u00facar)\u00a0<strong>or in<\/strong>\u00a0<strong>finos<\/strong>\u00a0(if the wine is aged in El Puerto de Santa Mar\u00eda or Jerez de la Frontera). This live biofilm therefore will start an interaction with the wine. As we mentioned above, the yeasts now metabolize\u00a0<strong>alcohol into acetaldehyde<\/strong>, the compound responsible for finding such amazing\u00a0<strong>fresh, pungent notes<\/strong>. However, there are more benefits of \u201cflor\u201d aging.<\/p>\n<p><strong>Yeasts not only consume alcohol<\/strong>, but they also take glycerol, oxygen, sugar, and acids contributing to an even drier, fresher, sharp personality. Most of these studies showed that only four different\u00a0<em><strong>Saccharomyces Cerevisiae<\/strong><\/em>\u00a0strains were identified:<\/p>\n<ul>\n<li><em><strong>Saccharomyces Cerivisiae beticus<\/strong><\/em><\/li>\n<li><em><strong>Saccharomyces Cerivisiae cheresiensis<\/strong><\/em><\/li>\n<li><em><strong>Saccharomyces Cerivisiae montuliensis<\/strong><\/em><\/li>\n<li><em><strong>Saccharomyces Cerivisiae rouxii<\/strong><\/em><\/li>\n<\/ul>\n<p>All of them can be found in different proportions, depending on the location of the triangle (Jerez de la Frontera, El Puerto de Santa Mar\u00eda or Sanl\u00facar de Barrameda), and play a key part in the complexity of the \u201cflor\u201d. Their ratio of content is the cause for the differences observed in the evolution, aging and a principal role in the personality of the different biological wines.<\/p>\n<p>What marks the presence of each strain of the S. Cerevisiae are the climatic conditions of the town where biological aging is taking place, and the specific micro-climatic conditions of the cellars.\u00a0<strong>Strains have different adaptability to certain nano-climatic conditions<\/strong>. Depending on these factors, very subtle to humans, we find a difference between \u201cvelos de flor\u201d and therefore distinctive finos and manzanillas. Every strain exerts specific influences on the wine transforming the wine along its aging process.<\/p>\n<p>According to research, the veil of\u00a0<strong>\u201cflor\u201d consists mostly of yeasts belonging to the Saccharomyces cerevisiae species, until now<\/strong>. Some of the wine compounds most deeply involved in \u201cflor\u201c yeast metabolism were analysed to consider the blending effect of this system. However,\u00a0<em>W. anomalus, P. membranaefaciens, P. kudriavzevii<\/em>\u00a0and\u00a0<em>P. manshurica\u00a0<\/em>were promptly found in some barrels during the second year of study.<\/p>\n<p>Also,\u00a0<strong>9 different genotypes of the\u00a0<\/strong><em><strong>S. cerevisiae<\/strong><\/em><strong>\u00a0were also found<\/strong>, posing a new riddle for researchers, winemakers, and investigators. Wine compounds most deeply involved in the veil of flor yeast metabolism were also analysed to consider these variables in the yeast diversity and dynamics of the Solera and Criadera system.<\/p>\n<p>Since the wines were produced from the same, single base wine, homogenized and then distributed around the sherry triangle, we are facing a revolutionary research that eventually will tell us how and\u00a0<strong>why the \u201cflor\u201d is responsible for having different styles of finos<\/strong>\u00a0(and manzanillas in a future research) within the region.<\/p>\n<h3 style=\"font-size: 30px;\">HOW DOES THE \u201cFLOR\u201d AFFECT WINE FLAVOUR?<\/h3>\n<p>As stated,\u00a0<strong>\u201cflor\u201d is responsible for enjoying such incredible wines<\/strong>\u00a0and without it we probably wouldn\u2019t be talking today about fino, manzanilla, amontillado or palo cortado. Undoubtedly our veil of\u00a0<strong>\u201cflor\u201d is the alpha and omega of the biological aging process<\/strong>. Bone dry wines, with tons of almond, bread, and sour dough notes. Lively and pungent with briny nuances. The spectrum is huge, a remarkable situation to draw you to taste manzanillas and finos side by side and find the multiple characteristics. In our case we did already, with our Manzanilla Papirusa, Fino del Puerto and Fino Jarana. A\u00a0<strong>splendid trio of biological wines<\/strong>, aged respectively in Sanl\u00facar, El Puerto and Jerez.<\/p>\n\t\t<\/div>\n\t\t\t<\/div>\n\n\t\n<\/div>\n\t<section class=\"section\"
