Brandy for an Old-Fashioned, we went with a\u00a0<strong>Spanish brandy de Jerez\u00a0<\/strong>aged in sherry barrels as it is very smooth and works synergistically with the sherries used in this cocktail.\u00a0 Acting as a split base with the brandy, we decided that\u00a0<strong>the best sherry for an Old-Fashioned is the\u00a0<\/strong><strong>oloroso sherry<\/strong>\u00a0as its bold flavor profile works well with the sherry finished brandy de Jerez.\u00a0 Lastly, in place of simple syrup, we used pedro xim\u00e9nez sherry as it adds some fruitiness that mimics the muddling of a cherry, while also providing another layer of complexity.<\/p>\n<h2 style=\"font-size: 30px;\">ABOUT LUSTAU BRANDY SOLERA RESERVA<\/h2>\n<p>The Lustau brandy de Jerez Solera Reserva is what we chose to use in this Old-Fashioned as it does not over-power the sherries.\u00a0 For the oloroso, the Lustau Don Nu\u00f1o oloroso was selected as it is the youngest of our olorosos, which provides just the right amount of oxidative qualities without being too overbearing.\u00a0 Finally, the Lustau San Emilio pedro xim\u00e9nez sherry was decided upon as it is homogenous to the other flavors present in our
